BLVD Bistro is an award-winning breakfast spot in the Queensbury area that is bustling with satisfied customers. Manager Nina Polkinghorne and Chef Erik Smith have run the busy, tiny 17 seat bistro since April 2015. Neighbours and regulars pack into the popular spot to savour the uniquely interpreted and presented brunch dishes. The Spanish-inspired cuisine is prepared fresh daily with local ingredients, sometimes from as close as the backyard garden!
Question: How are you supporting other local businesses?
Answer: We buy a lot of our inventory from local suppliers. We work with about 30 vendors, the majority of whom are BC owned businesses, and almost all the rest are Canadian owned. We love working with locals – Sprout Market, Culture Craft Kombucha, Two Rivers Meats, Tips Electric, Artisan Bake Shoppe, Buddha-Full, Alchemy Construction, Minuteman Press and so many others. We use only local service providers. All of our accounting and bookkeeping, banking, coaching, renovation, IT services, marketing, waste management, repair and other services are from BC based companies. We’re deeply committed to working with local people and keeping the money in our community.
Answer: We work hard to be a great employer. We pay a living wage even though it isn’t a standard practice in our industry. We also provide health benefits to our employees. We have 20 full-time, and 3 part-time employees.
Question: What environmental practices are you proud of?
Answer: We have implemented waste management practices to reduce our waste and improve composting and recycling. We installed a garden in the back of our bistro, so we’re growing some of our own food. We support local farms, reducing the carbon footprint of our purchasing. We also use a local program to repurpose leftover food to reduce food waste and help feed those in our community who are less fortunate. We source from local suppliers, but also look at the environmental attributes of our purchases.
